“It tastes like candy!” – Anonymous Taste Tester
This delicious dessert originated in France, Mainly made in the wine regions! The process I used to poach the pears was via sous vide. [Sous vide, is a process of vacuum sealing food in a bag, then cooking it to a very precise temperature in a water bath.] After the pears have been poached, you can reserve the remaining liquid transfer to a pot and boil on low medium to thicken and pour that yummy-ness onto the pears for an extra creaminess. But I enjoy the poached pears served as is with vanilla ice cream!

Ingredients:
- 4 ripe pears, peeled
- 1 cup red wine (I used Rioja)
- 1/2 cup granulated sugar
- 1/4 cup brandy
- 1 teaspoon salt
- 2 to 3 Tablespoons zest (I used almost the entire orange exterior) [I really enjoy the citrus coming through]
- 1 Vanilla Bean, seeds scraped
Instructions:

- Place the pears, red wine, granulated sugar, brandy, salt, orange zest, vanilla bean seeds.
- After having everything in the bag massage the pears a little while taking the air out of the bag. *(Tip you can place the water in the water to displace the air)
- After the bag is sealed. Preheat water bath fitted with sous vide to 175 degrees 175°
- Cook the pears for 1 hour, making sure the bag is completely submerged.
- When the pears are done, carefully take them out of the bag they will be on the delicate and warm side. Place them onto a cutting board, core and slice. Top with vanilla ice cream! Or thicken remaining liquid and pour onto your yummy desert.
