Steak Skewers with Mushroom, Bell Peppers & Onions

Servings 4-6

  • 1 pound of beef sirloin (cut into 1 inch cubes)
  • 1 red bell pepper
  • 1 1/2 teaspoon black pepper
  • 4-5 cloves of minced garlic
  • 1 1/2 – 2 large onions (cut into 1 inch cubes)
  • 3/4 cup olive oil
  • 1 pound Cremini mushrooms (wash and leave whole)
  • salt to taste

  1. In a large bowl combine the cubed beef sirloin cubes, garlic, salt, pepper (or your favorite grilling steak rub) toss together everything making sure the meat is fully slathered
  2. Toss the mixture from the bowl into a zip lock bag and put in the fridge to marinate either over night or for a minimum of 1 hour
  3. Your are going to thread the ingredients ie. the cubed steak, and veggies (making sure to leave some space on each side about 1/3 inch)
  4. Once you’re ready to grill set the grill to medium-high heat, grill the skewers for about 15-20 minutes. (About 3 1/2 minutes per side!)
  5. Enjoy!

*Make sure not to press down on the meat while it’s grilling because you can dry it out which is not what we want! 🙂
Served great with quinoa or a buttered lettuce salad! Or both! 🙂
