Ingredients
- 2 tbsp Ginger chopped
- 3 – 4 garlic cloves chopped
- 4 cups chopped heirloom carrots
- 1 tsp moroccan seasoning
- 3 cups chicken stock
- 3 tbsp cilantro
- 1/2 cup yellow onion
- 1 tsp salt to taste
- 1/2 tsp ground pepper
Instructions
- rough chop the carrots (and peel), garlic, and onions
- peel and chop the ginger
- place all the ingredients in the slow cooker and let it cook until the carrots are tender (about 3-4 hours on high)
- once all the ingredients get tender, transfer to a blender and mix
- taste for extra salt of pepper
- garnish with cilantro
This recipe also is great if made ahead of time just set the slow cooker on low so all the flavors have time mesh together
