Cheesy Egg and Bacon Hash

10-inch iron skillet
Serves 2-3


  • 2 Medium size potatoes, clean and peeled, diced
  • 3 tablespoons olive oil
  • 6 ounces of diced bacon
  • 1/2 yellow onion, diced
  • 3 garlic cloves, chopped
  • 1/2 cup finely shredded mild cheddar cheese or mozzarella
  • 2-3 eggs
  • salt and pepper to taste
  • chopped jalapeños [optional]



  1. Heat that iron skillet up on medium heat with 2 tables spoons of olive oil
  2. Wash, Peel and dice the potatoes, place the potatoes in the skillet and cook for 8-10 minutes (stirring occasionally, making sure the bottoms aren’t burning)
  3. After 7-8 minutes throw in the diced bacon into the skillet and cook together for 6 minutes stirring to make sure to get all that bacon flavor all around the potatoes
  4. Add onions chopped onions cook until they become translucent, add 1/4 teaspoon of salt to the skillet mixture
  5. Toss in the chopped garlic and cook for another 2 minutes to combine everything
  6. Make little wells for where you are going to crack the eggs (2-3) depending on the servings, cracks the eggs into the wells and let the eggs cook for 2-3 minutes, sprinkle the cheese around the eggs or everywhere! (cover skillet to finish cooking to your desire) eggs should be runny in the middle and white part cooked
