10-inch iron skillet
Serves 2-3
Ingredients:
- 2 Medium size potatoes, clean and peeled, diced
- 3 tablespoons olive oil
- 6 ounces of diced bacon
- 1/2 yellow onion, diced
- 3 garlic cloves, chopped
- 1/2 cup finely shredded mild cheddar cheese or mozzarella
- 2-3 eggs
- salt and pepper to taste
- chopped jalapeños [optional]
Instructions:
- Heat that iron skillet up on medium heat with 2 tables spoons of olive oil
- Wash, Peel and dice the potatoes, place the potatoes in the skillet and cook for 8-10 minutes (stirring occasionally, making sure the bottoms aren’t burning)
- After 7-8 minutes throw in the diced bacon into the skillet and cook together for 6 minutes stirring to make sure to get all that bacon flavor all around the potatoes
- Add onions chopped onions cook until they become translucent, add 1/4 teaspoon of salt to the skillet mixture
- Toss in the chopped garlic and cook for another 2 minutes to combine everything
- Make little wells for where you are going to crack the eggs (2-3) depending on the servings, cracks the eggs into the wells and let the eggs cook for 2-3 minutes, sprinkle the cheese around the eggs or everywhere! (cover skillet to finish cooking to your desire) eggs should be runny in the middle and white part cooked
